Heath received his early education at the Royal College of Music in London, where he studied under the tutelage of Ivor James. He later continued his studies at the Paris Conservatoire, where he was taught by the legendary cellist, Pablo Casals. Heath's time in Paris was a turning point in his career, as he was exposed to a new level of musical excellence and was able to refine his skills under the guidance of one of the greatest cellists of all time. After completing his studies, Heath began his professional career as a cellist, performing with various orchestras and ensembles throughout Europe. In 1956, Heath joined the London Symphony Orchestra, where he served as the principal cellist for over a decade. In addition to his work with the London Symphony Orchestra, Heath was also a sought-after soloist and chamber musician.
