Born on December 22, 1956, in Paris, France, Pérès grew up in a family of musicians and was exposed to music from a young age. His father was a composer and conductor, and his mother was a pianist. Pérès began his musical training at the age of six, studying piano and singing. Pérès continued his musical education at the Conservatoire National Supérieur de Musique et de Danse de Paris, where he studied choral conducting and early music. He also studied musicology at the Sorbonne, where he earned a doctorate in 1986. During his studies, Pérès became interested in the music of the Middle Ages and the Renaissance, and he began to specialize in this area of music. In 1982, Pérès founded the Ensemble Organum, a vocal ensemble dedicated to the performance of early music.
