Born in 1979 in Paris, Chauvin began playing the violin at a young age and quickly showed a talent for the instrument. He studied at the Conservatoire National Supérieur de Musique et de Danse de Paris, where he was a student of Jean-Jacques Kantorow and Michèle Auclair. After completing his studies, Chauvin began performing with various orchestras and ensembles, including Les Musiciens du Louvre, Les Arts Florissants, and Le Concert des Nations. He also founded his own ensemble, Le Concert de la Loge, in 2015. The ensemble is named after the 18th-century orchestra that was led by the composer Joseph Bologne, Chevalier de Saint-Georges, and is dedicated to performing music from the Classical and early Romantic periods. Chauvin has become known for his historically informed performances, which aim to recreate the sound and style of music from past eras. He has studied historical performance practices and techniques, and uses period instruments and bows in his performances. He has also conducted research into the music of lesser-known composers from the 18th and 19th centuries, and has worked to bring their music to a wider audience.
