He studied at the Zurich Conservatory and later at the Paris Conservatory, where he was a student of Marcel Moyse, one of the most influential flute teachers of the 20th century. Graf's career as a professional flutist began in the 1950s when he joined the Zurich Chamber Orchestra as its principal flutist. He quickly gained recognition for his exceptional talent and was soon invited to perform with some of the world's leading orchestras, including the Berlin Philharmonic, the London Symphony Orchestra, and the New York Philharmonic. Throughout his career, Graf has been known for his virtuosic playing and his ability to bring out the emotional depth of the music he performs. He has a particular affinity for the works of Mozart, and his interpretations of Mozart's flute concertos are considered some of the finest ever recorded. One of the highlights of Graf's career was his performance at the 1959 Lucerne Festival, where he played Mozart's Flute Concerto No. 1 with the Berlin Philharmonic under the direction of Herbert von Karajan. The performance was a critical and commercial success and helped establish Graf as one of the leading flutists of his generation. Graf has also been a prolific recording artist, with over 100 recordings to his name. His recordings of the complete Mozart flute concertos, as well as his recordings of works by Bach, Vivaldi, and Telemann, are considered some of the definitive interpretations of these works.
