Sanz's music is characterized by its intricate melodies and complex harmonies. He was known for his use of counterpoint, a technique in which two or more melodies are played simultaneously. Sanz's music also features a strong sense of rhythm and a lively, dance-like quality. One of Sanz's most famous pieces is "Canarios," a lively dance in 6/8 time. The piece is named after the canary bird, which was a popular pet in Spain at the time. "Canarios" is a virtuosic piece that showcases Sanz's skill as a composer and performer. It is still a popular piece among guitarists today. Another notable work by Sanz is "Folías," a set of variations on a popular Spanish dance. The piece features a series of variations on the main theme, each one more complex and intricate than the last.
