Born on December 19, 1942, in the town of Plovdiv, Bulgaria, Evstatieva showed an early interest in music and began singing in her local church choir at the age of six. Her parents recognized her talent and encouraged her to pursue a career in music. Evstatieva received her formal music education at the State Academy of Music in Sofia, Bulgaria, where she studied under the tutelage of Professor Lyubomir Pipkov. She graduated with honors in 1966 and began her professional career as a soloist with the Sofia National Opera and Ballet. In 1970, Evstatieva made her international debut at the Salzburg Festival in Austria, where she performed the role of Donna Anna in Mozart's "Don Giovanni." Her performance was met with critical acclaim, and she quickly gained recognition as one of the leading sopranos of her generation. Over the course of her career, Evstatieva has performed in some of the world's most prestigious opera houses, including the Metropolitan Opera in New York, the Royal Opera House in London, and the Paris Opera.
