Born on August 22, 1948, in Toulouse, France, Canihac showed an early interest in music and began playing the trumpet at a young age. He went on to study at the Conservatoire National Supérieur de Musique de Paris, where he honed his skills and developed a deep understanding of classical music. Canihac's career as a musician began in the early 1970s when he joined the ensemble La Petite Bande, which was founded by the Belgian conductor and harpsichordist Sigiswald Kuijken. With La Petite Bande, Canihac performed in numerous concerts and recordings, including the complete works of Johann Sebastian Bach's Brandenburg Concertos. In addition to his work with La Petite Bande, Canihac also performed with other prominent ensembles, including Les Arts Florissants, Le Concert des Nations, and the Amsterdam Baroque Orchestra.
