Born on December 23, 1979, in Marseille, France, Gastaldi showed an early aptitude for music and began studying piano at the age of five. She quickly demonstrated a natural talent for the instrument and went on to win numerous competitions and awards throughout her formative years. Gastaldi's early training was under the tutelage of her mother, who was a pianist and music teacher. She later studied with renowned pianists such as Jacques Rouvier, Maria João Pires, and Murray Perahia, among others. Her studies took her to some of the most prestigious music schools in Europe, including the Conservatoire National Supérieur de Musique et de Danse de Paris, the Hochschule für Musik und Theater in Hanover, and the Mozarteum University of Salzburg. Gastaldi's career as a professional pianist began in earnest in the early 2000s, when she began performing in major concert halls throughout Europe and Asia. Her debut recital at the Théâtre des Champs-Élysées in Paris in 2002 was met with critical acclaim, and she quickly established herself as one of the most promising young pianists of her generation. Over the years, Gastaldi has performed with some of the world's leading orchestras, including the Orchestre National de France, the Orchestre Philharmonique de Radio France, the Orchestre de Paris, the London Philharmonic Orchestra, the Tokyo Philharmonic Orchestra, and the Seoul Philharmonic Orchestra, among others. She has also collaborated with many distinguished conductors, including Myung-Whun Chung, Paavo Järvi, Emmanuel Krivine, and Yannick Nézet-Séguin. Gastaldi's repertoire is wide-ranging and includes works by many of the great composers of the classical tradition, from Bach and Mozart to Beethoven, Schumann, Chopin, and Debussy. She is particularly noted for her interpretations of the music of Franz Liszt, and has recorded several albums of his works, including his complete Années de pèlerinage. In addition to her work as a performer, Gastaldi is also a dedicated teacher and has given masterclasses at many of the world's leading music schools, including the Juilliard School in New York, the Royal Academy of Music in London, and the Conservatoire National Supérieur de Musique et de Danse de Paris. She is also a member of the faculty at the Conservatoire National de Région de Marseille. Throughout her career, Gastaldi has received numerous awards and accolades for her performances and recordings. In 2003, she was awarded the Prix de la Révélation Classique de l'Adami, which recognizes outstanding young artists in the classical music field. She has also been a prize-winner at several international piano competitions, including the Maria Canals International Music Competition in Barcelona and the International Piano Competition of the City of Paris. Gastaldi's recordings have been widely praised for their technical brilliance and musical sensitivity. Her album of Liszt's Années de pèlerinage was named "Editor's Choice" by Gramophone magazine, and her recording of Schumann's Davidsbündlertänze was awarded the Diapason d'Or.
