He was the son of a prominent Greek composer, Manolis Pappas, who was also a professor of music at the Athens Conservatory. Iakovos grew up in a musical family and was exposed to classical music from a very young age. He showed a keen interest in music and started playing the piano at the age of six. Iakovos received his early education in music from his father, who was his first teacher. He later went on to study at the Athens Conservatory, where he received formal training in piano performance, music theory, and composition. He was a gifted student and showed exceptional talent in piano performance. He graduated from the conservatory with top honors and went on to pursue further studies in music in Europe. In 1955, Iakovos moved to Paris, where he studied under the renowned French pianist, Marguerite Long. He also studied with other prominent pianists, including Alfred Cortot and Nikita Magaloff. In 1958, Iakovos moved to the United States, where he continued his studies at the Juilliard School in New York City. During his time at Juilliard, Iakovos won several awards and scholarships, which helped him further his career in music. In 1961, Iakovos made his debut as a solo pianist at the Carnegie Hall in New York City. The performance was a huge success, and he received critical acclaim for his exceptional piano skills.
