Gilbert's career as a performer began in the 1950s, where he performed as a soloist and chamber musician in Canada and Europe. He quickly gained recognition for his exceptional skills and was invited to perform with some of the world's leading orchestras, including the London Symphony Orchestra, the Berlin Philharmonic, and the New York Philharmonic. One of Gilbert's most significant contributions to the world of classical music was his work in the field of early music. He was a pioneer in the revival of Baroque music, and his performances of works by Bach, Handel, and Scarlatti were highly acclaimed. He was also known for his interpretations of French Baroque music, particularly the works of François Couperin.
