Koutev's early career was marked by his work as a conductor and arranger for various Bulgarian folk ensembles. He was particularly interested in the traditional music of his homeland and spent many years traveling throughout Bulgaria, collecting and transcribing folk songs and dances. He believed that these traditional forms of music were an important part of Bulgaria's cultural heritage and sought to preserve and promote them through his work. In 1951, Koutev founded the Bulgarian State Television Female Vocal Choir, which later became known as the Bulgarian State Radio and Television Female Vocal Choir. The choir quickly gained international recognition for its unique sound, which blended traditional Bulgarian folk music with modern choral techniques. Koutev served as the choir's conductor and arranger for many years, and his compositions and arrangements became some of the choir's most beloved works. Koutev's compositions are characterized by their use of traditional Bulgarian folk melodies and rhythms, which he often combined with modern harmonies and instrumentation. He was particularly interested in the use of asymmetrical rhythms, which are common in Bulgarian folk music but are rarely found in Western classical music. Another notable work by Koutev is his "Bulgarian Mass," which was first performed in 1960.
