He was born on August 28, 1588, in Nuremberg, Germany. Herbst was the son of a musician and was raised in a musical family. His father, Johann Herbst, was a well-known organist and composer in Nuremberg, and his mother, Anna, was a singer. Herbst began his musical education at a young age, studying with his father and other local musicians. He showed great talent and quickly became known for his skills as an organist and composer. In 1606, at the age of 18, he was appointed as the organist at St. Sebaldus Church in Nuremberg, a position he held for the rest of his life. As a composer, Herbst was known for his sacred music, particularly his choral works. He wrote a number of cantatas, motets, and masses, many of which were performed at St. Sebaldus Church. His music was highly regarded during his lifetime and was often compared to that of his contemporaries, such as Heinrich Schütz and Johann Sebastian Bach. One of Herbst's most famous works is his Christmas cantata, "Das neugeborne Kindelein" (The Newborn Child), which was first performed in 1623. The cantata tells the story of the birth of Jesus and features a number of soloists and a choir. It is considered one of the most beautiful and moving works of the Baroque period. Herbst also wrote a number of instrumental works, including sonatas and suites for various instruments. His music was known for its intricate counterpoint and use of chromaticism, which was unusual for the time. In addition to his work as a composer, Herbst was also a respected music teacher. He taught music theory and composition to a number of students, many of whom went on to become successful musicians in their own right. Herbst died on June 2, 1666, in Nuremberg, at the age of 77. He was buried at St. Sebaldus Church, where he had served as organist for over 60 years.
